Shy Mice

Rice Mice
I was paging through a Japanese bento cookbook this morning and saw some cute, easy ideas, and was inspired to create my own. So my shy mice were born :P My daughter insisted on eating one, but only after she completely studied it and played with it.
The mice were simple to make; I shaped hot short grain rice in my hand until it resembled a mouse's body, placed it in my bento, and added finishing touches. Normally, I use chopsticks to place the smaller details, but today I tried a cake tester; much easier to work with! What I liked the most about using it was that nothing stuck to it and I could skewer items without leaving a noticeable hole.


Curry Adventures: Part One
A few days ago my sister-in-law and I stopped at Whole Foods so she could get a few things, including something for lunch; Chicken Curry. She is very limited on things she can eat and really enjoyed this, so she took the label off, pasted it on the back of my writing journal and asked me to make it for her! :D I don't mind, I'd like to be able to help find something that taste good and doesn't make her sick (In fact, she asked me to help her learn to cook, so we'll be doing "cooking school" once a week now!).
Today's lunch was my first attempt at recreating it although I didn't have all the ingredients. I trying to closely recreate the flavor, but make it easy for her to cook and with ingredients she has. So, here is the sort of recipe from today:

Tofu Curry
1 block Extra firm tofu - cubed
Non-stick spray
1 medium onion - chopped
Raisins
Curry Powder
Water
Miracle Whip - Light

"Chutney" Ingredients
Applesauce
Rice Vinegar
Lemon juice
Honey
Salt and Pepper
Fresh ginger - minced

Heat pan to medium to high heat and add tofu – brown. Turn heat to medium and add onions and raisins. When onions are clear, add water to plump raisins; I do this to make them easy for my son to eat, but you could skip the simmering by adding less water. Blend the chutney ingredients together, adjust amounts to taste; add to tofu. Reduce then remove from heat. Add miracle whip; serve. Enjoy!

Awwww, those mice are so cute :) Are those bean sprouts for the tails?

The tails are udon noodles, but bean sprouts would be a good idea too; I'll have to try that sometime.
