The Deconstructed Bento...

...also know as, "I was too lazy and hungry to make a bento!" Honestly, I was planning on making a bento out of this, but as I was cutting up the veggies I thought it'd make an interesting photo.

This bento was so good! And I actually have the recipe!



Glazed Orange Chicken Stir Fry

2 boneless, skinless chicken breast cut in stripes
3 Tbs. honey
3 Tbs. rice vinegar (or white vinegar for a more tangy flavor)
2 Tbs. soy sauce
2 1/2 tsp. cornstarch
1/4 to 1/2 tsp. chinese five spice (to taste)
2 oranges
salt and pepper to taste
Olive oil or non-stick cooking spray
4 cups stir fry vegetables
2-3 cups cooked rice

Peel oranges and cut in half along the width. Squeeze juice from one half, getting 3 Tbs. juice. Pull orange sections apart into bit-size pieces. Place to the side.

Mix honey, vinegar, soy sauce, cornstarch, and five spice with wire wisk. Place to the side.

Stir-fry vegetables with non-stick spray. Place to the side. Cook chicken stripes in olive oil until no longer pink. Set aside.

Pour sauce mixture in pan and cook until thick and bubbly. Add chicken and vegetables. Just before serving add orange sections. Enjoy!

(Also good with shrimp)

Saw your photos on flickr, you make great looking bento boxes! Bento really is a great diet format because it encourages healthy eating while still allowing a few treats. So often, 'healthy' food looks bland, but your 'diet' bentos look great! Congrats on making the commitment to yourself and good luck with your goal ^_^
